The Sunday Paper Recommends

At The Sunday Paper, we want to inspire you to gather at your table—virtually or with friends and family—and open your heart and mind to conversations that will move the needle. After all, the dinner table is where we connect on topics and map out the changes we can all make that’ll really move the needle.

This week, to encourage your conversations, we recommend checking out the following:

Cat Cora’s amazing latkes recipe for your Sunday Dinner and the start to Hannukuh (see below!).

The new documentary, Julia that offers a deep look at the extraordinary life of famed chef Julia Child.

A look at Mel Brooks’ incredible life and career in his new memoir, All About Me!: My Remarkable Life in Show Business

Cat Cora’s Waffle Iron Latkes

Ingredients:

2 cups shredded potato
1/2 cup minced onion
salt and pepper
1 large egg, beaten
For Toppings:
apple sauce
sour cream
Greek yogurt

SPECIAL EQUIPMENT
waffle iron

INSTRUCTIONS
Mix potato, onion and salt in a bowl. Move to a sieve and let drain for about 15 minutes. Then squeeze any extra moisture out of the mixture.
Add your egg and pepper, mixing to coat.
Heat your waffle iron (put on high if there is an option).
Coat the iron with non-stick spray (I recommend olive oil spray), then add two tablespoons of the mixture. Close the lid and let cook for about 6-8 minutes or until they’re golden brown.

Use applesauce, sour cream, or Greek yogurt
