Ginger Scallion Turkey Burgers with Spicy Coconut Peanut Sauce

Serves 4

Spicy Coconut Peanut Sauce

Turkey Burgers

Directions

  1. Make the peanut sauce: In a small bowl, whisk together the peanut butter, coconut milk, sesame oil, salt, coconut aminos, and Sriracha until fully combined. Set aside until ready to serve.
  2. Make the burgers: In a large bowl, use a fork to mix the ground turkey, quinoa, scallions, coconut aminos, garlic, ginger, salt, and pepper until combined.
  3. Divide the meat into 4 portions, and using your hands, form them into 1-inch-thick patties.
  4. Heat the sesame oil in a large skillet over medium heat. Add the patties to the skillet, and press your thumb in the center of each one to form an indentation (this will help the burgers hold their shape as they cook).
  5. Cook until the burgers are browned on the outside and completely cooked through, 5 to 7 minutes on each side.
  6. Serve the warm burgers on buns or in lettuce wraps (or even in a bowl with your favorite mix-ins) with your desired toppings. Spoon the spicy coconut peanut sauce on top and enjoy. Leftover cooked burgers will keep in an airtight container in the fridge for up to 5 days.
